My first dinner-related victory—chicken meatballs!

Had no idea that chicken could taste good as a meatball or be eaten from a bowl; I’m learning something new every day

I made Cilantro-Lime Chicken Meatball Bowls with Sweet Corn Pico de Gallo, and Cauli-Rice from Iowa Girl Eats for Handsome.

Not only did he say it was good after the first/second bite, but he also asked for the leftovers to use for his lunch the next day.

This is the first time he has ever asked for leftovers from a meal I made.

I wanted to take laps around the kitchen, throw a fist in the air, and proclaim, “I am a kitchen goddess!!” Instead, I simply smiled and said demurely, “Glad you like it.”

Definitely celebrating because I loved it, too. Especially when I got the right proportions on my fork for the perfect bite. So yummy!

Admittedly, I don’t normally eat chicken from a bowl unless it is in soup, so this was a new experience for me.

Never really thought about my personal expectations regarding dishware before, but after some soul searching – and that first perfect bite – I quickly decided that it didn’t matter. I’d eat this from a mug and not care. It is that good.

Only after making it did I realize that, when making the guacamole and the pico de gallo, I should have just pulled out two medium size bowls and dumped the ingredients in there. With the pico de gallo, the sauce needs to be made separately, but that’s it. Otherwise, to future me, save dishes! Just chop and dump. Much faster.

I had put everything in separate small bowls to keep it all straight, which took time and energy that could have been saved for other things, like dessert.

While the recipe is time-consuming with all the dicing and chopping, it wasn’t hard to follow the recipe, which was nice. All in all, I think this is a great recipe for a weekday dinner. I will be making it again.

Maybe even serve it in a mug, extra large.

    Sitting next to my fireplace, looking around at the Christmas decorations I put up today. It took a while to get into the holiday mode, but I made it! It only took five boxes of decorations, four Christmas movies, rearranging everything three times, two breaks for food…and a parrr-tridge in a pear tree! (just kidding…there is no pear tree :0)

    I was making a white chocolate mocha when it came time to sprinkle the cinnamon onto the whipped cream. I started shaking the can over the cream when I realized, it was black pepper!! (In my defense, they are both in similar tins). Fortunately, I caught it before my cream was covered in black. Added the cinnamon and it tastes okay, just got a bit of a bite to it :O) #lol #oops
